Three-carbon acidic molecules, Pyruvate plays an important role in the metabolism and production of carbohydrates as well as fatty acids. With oxygen present, pyruvate is oxidized into acetylCoA which can then be used to generate energy. The cell releases pyruvate if it lacks oxygen (Sahoo and al., 2019,). Sometimes, pyruvate can form other molecules such as formate and ethanol. These molecules are essential for producing beer, wine and other alcoholic beverages (Gibson, 2021).
